Simply put... because its affordable. And at the end of the day your friends and family will not want to sit through 4 hours of your special day - even if they pretend that they do.  In todays fast paced world of information, we would rather see a well produced summary of what we missed.  A cinematic highlight is more cost effective than a traditional full production.
